How Sweet It Is Durham Corn Now Available Durham Farm Fresh summer sweet corn is now in season season and just in time lor your backyard barbeque. The corn is plentiful and in prime form in Durham so come and experience experience this versatile vegetable along with the various other fruits and vegetables that the producers of Durham Farm Fresh make available to you all year. There are three main types of sweet corn grown in the Durham region so you can decide which suits your taste the best: Normal: This is the most traditional type of corn and its sugar content is less than half (9-16%) that of the other types. It also has more of a starchy flavor. Sugar Enhanced: This is a newer type of sweet corn and it converts its sugar to starch faster than supersweet corn. Its flavor is sweet and its kernels have a delicate texture. Supersweet: This particular type of corn is renowned for its ability to retain its natural sugars for extended periods of time before and after harvest. Supcrswcct corn is the sweetest of all the types and is also the crunchicst. Preparing All varieties of farm fresh sweet corn can be prepared the traditional way by boiling but they can also be steamed, roasted, barbequed (with the husks left on and soaked in cold water first), or microwaved. Sweet com should be kept refrigerated in order to slow the conversion of sugar to starch in order to maintain the ideal taste. Supcrswcct has the longest shelf life but all types will have a longer life if they are kept moist and at a temperature around 0-1 °C. In order to keep the sugar content at a maximum it is important important to maintain adequate air circulation when storing sweet corn. M.J. Members of Local 57 of the Ontario Nurses Association have been off the job since June 18th. They are currently in negotiations with management management to reach a first collective collective agreement alter unionizing unionizing in 1996. According to Local 57 spokesperson Marlene Dixon, one of the key issues for nurses is a six- year-old wage freeze. Nurses agreed to roll back wages to 1991 levels back in 1992, Dixon says. "It's gone on loo long for people to continue to accept it." Hourly wages for St. Elizabeth nurses range from $16.81 to $23.08. Home care is a rapidly growing area of the health care system and home care nurses should be fairly compensated, Dixon argues. Eva Novy, communications communications coordinator for St. Elizabeth Health Care, said home health care is going through a major evolution right now. Although site can sympathize sympathize with the nurses' perspective, she says St. Elizabeth cannot afford to lilt the freeze in face of decreased revenues. The organization has been affected by a number of different government policies, she adds, from the NDP's social contract (which included a three- year salary freeze) and now 697-0621 the Conservatives' move to more open competition and phasing out protected markets. markets. St. Elizabeth Health Care usually makes about 15,000 home visits a month to clients across Durham and those calls arc requiring requiring more complex and lengthy care, says Marlene Dixon. The ONA is also concerned concerned about the safety of nurses travelling alone after dark without cell phones.
